1. CARBON STEEL

This is one of the most inexpensive material to be used for making Kitchen knife blades. Aside from its inexpensiveness carbon steel are very easy to sharpen. The downside of blade made with carbon steel that vulnerable to rust and it releases metallic taste to acidic food.

2. STAINLESS STEEL

Stainless steel is an alloy (that is to say a mixture) of iron, nickel and molybdenum. Most of the common kitchen knives are made of 420 stainless which contains high chromium and low stainless steel. Most of the consumer brand are made of low-carbon steel blade. These are usually more expensive but are very highly resistant to corrosion or rust. They are also very easy to sharpen. So they have all the quality of a good kitchen knife. They can be compared to the carbon Knife which combines high carbon and low stainless steel. They are usually less expensive than the stainless steel and are cheaper. They also have an ability to retain edge for a longer period. so it can last longer.

3. LAMINATED BLADE

These type of blade combines hard steel laminated between tougher steel. It is harder to to grind and so it will make a high resistant and will hold edge and stay sharp for a longer period. 



They are some of the materials used in making blade but there are many others like plastic blade for cutting veggies and ceramic knives. The ones I mentioned are the most commonly used to make Kitchen Knives' blades. Let us now look at the materials used in making the handle of the Kitchen knife. Handles have been made over time with different materials some of which include :

Wood provides a very good grip for the handle, they are very beautiful and very attractive. It is very difficult to care for as it requires constant cleaning with mineral oil. Wooden handle do not require constant washing with water as that can lead to it getting cracked or warped when it is exposed to water for a prolonged period.

2. PLASTIC HANDLES

Handles made with plastic are lighter than most of the materials used to make Knives' handle. Plastic handles can easily be cared for more than their wooden counterpart. The issue with them is that they are prone to ultraviolet damage ad very sanitary.

These are made mixture of wood and plastic, they are considered the best choice of handles as they are easily cared for and very sanitary. They also last longer than the wood and the plastic. This are considered the most durable of all knife handles. The only downside is that it is very slippery but most knife makers now use bridges to avoid this. One good aspect of this kind of knife is that they are very easy to be cared for and sanitary and also very durable.
